Detailed Language Breakdown

I am working with my state's office of Language Access and I would really like to keep track of how many people speak endangered/nearly extinct languages as well as the changes in number of speakers over time. Is there a way to access the language data before it's aggregated? For example, I would like to see the specific language rather than the category "Other Native North American languages".

The data points that I want most are the language and age of the speaker, but I would also like to have this on a county level. If the county level causes privacy issues, I would like to see it at the state level. I'd also be willing to report the languages in their aggregated groups, but I would still need to see the specific language to know if it's endangered.

I'm concerned that my request may be denied if I ask for too much. I understand that this data is obfuscated for the sake of privacy. While I'd obviously prefer to get the data at the most granular level, I'd also be happy to compromise. I'm just not sure how forgiving this process is. Thank you for any guidance you can provide.
