Does anyone have any insight on why the 2000/2010 SF3 API endpoints do not exist anymore? Only SF1 variables are available, though 2000/2010 SF3 APIs did exist in the past.

First, prior to the 2010 Census, the American Community Survey took the place of the decennial long form, which is the source of SF3 data, so there has never been a "2010 SF3" (unless you count the 2010 ACS Summary Files, I guess!)
But your question is still pertinent for the 2000 SF3. I shared it in the Census Bureau's Developers' Forum in Slack and got this response:

Hi @Jonathan S, The 2000 SF3 endpoint was deactivated. We are still waiting for the new endpoint to be reviewed and approved. Until then, users can find data through the FTP at https://www2.census.gov/. I believe a notification email was sent out to users who had accessed the SF3 API over the last few months. We'll keep everyone posted as we work towards getting the new endpoint up and running.
So stay tuned, I guess.
In addition to the FTP site she cited, another source for SF3 data (2000 and earlier years) is IPUMS NHGIS, which also provides an API for requesting and downloading data files.
